Depending what you're breeding not that hard at all! It also depends on the rarity so lesser rare pokemon breed more eggs.

You can get lucky and grab one from the Lab of 10k normal gems for one from the Gem Collector.

I've always been told that pre-evolutions would give more eggs, but I never really tested it.

Can people breed Alolan form pokemon or will they always produce their true counterpart or is it a chance like the event Pokemon? Does anyone know? :3

From what I heard, Alolan pokémon always breed Alolan pokémon.
Of course, this only applies to pokémon with a base Alolan forme, not to pokémon that only have an Alolan evolved forme.

Does Santa Birb count as a Ditto for breeding? Or can it not be bred?

Santa Birb and Ditto are in different Egg Groups. Santa Birb's egg group is Undiscovered, which means it's not breedable, so you can't count it as Ditto.

so a way to increase eggs in the daycare is to breed the first evolution of the same pokemon? on the first page it says the pokemon should be holding an everstone so does that mean it has to be the first evolution of a pokemon or can you just give the other evolved forms an everstone to increase eggs?

Are Amaura breedable? It's for my shiny hunt, and I'm not sure if Fossils are breedable.

Fossils are breedable :)
You can always check their PokéDex and if they have an Egg Group [that is not Undiscovered], they can breed.

[Ditto is also an exception, as they breed with anything except themselves and Undiscovered]

You will always get the first evolution so in this case you will get the Budew.
