At least I'm sure when you use the filter option.
Pokemon that evolved during their time in GTS will still appear as their previous evolution which they were in the time trade was made.
When you open the trade, it will show the right evolution.

You can check with Charmander in filter for example, if it reached high enough level to evolve once or twice and is not having an everstone it will show what I described as a bug above.

As a test, I've searched for Purrloin and on the overview page, they were all shown as Purrloin [image on top], but on the details-page it showed up as Liepard [image at the bottom]

This issue has now been fixed.

It is now no longer possible to evolve your Pokemon while it is up for trade. I don't think evolution is intended when you've set it up for trade, so this seemed like a good solution to me.
