Is there even a reason to find all 20 or can you just go for the 18 and call it a day

I have a nice and easy way to find them. (Not saying what it is. Cuz or terms of service) but still.

Yes, you can just find 18, you will get everything. There is no reason for getting all 20. ~~except for people with pride problems~~

Seeing as this is a question, I'm moving it to 'help'!

While there is no stated prize for getting full this year, in the past, you usually get a shiny/mega able version of the event for getting all the eggs so it's possible that that's still the case.

However, while Riako can be a bit trolly, he'd never lie about what you need to get the prize.

If he says there's no prize for 20 eggs, it's very likely [not to say 100% certain] there won't be a prize for finding all 20.

All prizes were stated in the announcement post :) You get an item after finding 12+ and an Event Pokémon after finding 18+. There's no need to find all 20.

Finding all eggs was a bit too challenging and therefore extremely frustrating for many players in the past. Therefore we've made it no longer a necessity. The event is meant to be fun for everyone after all!
