Because 7 human
wizards/magicians/whateveryouwanttocallthem cast the spell to
create the barrier, that's how many human souls it'd take to open
it. He wasn't being greedy, that's just how many he needed. As
Toriel said, he could've left after absorbing one soul, gotten the
rest, then come back right away, but instead he waited for humans
to come to him in the hope that no more ever would.
The only way Asgore could've broken the barrier without killing 7 people is if he had convinced the first fallen human (after Chara) to pass through using his soul and asked humans to help without violence. However, what evidence did he ever have that humans could be kind enough to agree to this? They locked all of monster-kind up to begin with, then killed his son when he tried to free them, and with this high a level of doubt, monsters would lose their king only on a POSSIBILITY of freedom, so it would've been a poor decision as a monarch and leader.
As for Alphys, towards the end of the "date" with her, she had me feeling pretty uncomfortable regarding her feelings towards Undyne. I can totally see where they got that. I wouldn't say she's full on lusty where she's just throwing herself out there, but still.
I find it fascinating, really. There are 7 human souls that've been in the Underground, and they all counter one of the sins in a way, if you think about it. I'm not saying humans are good and monsters are evil or anything, I just find it a really neat idea and think it could definitely be expanded upon.
