Do I still have a shiny chain without a Poké Radar? Or do I just count it manually?

You cannot CHAIN without the Pokeradar. You can still hatch Pokemon to get a shiny, but your chances won't increase for every consecutive hatch of the same Pokemon. That only works with a powered Pokeradar
