Evestone. You can buy them at the item shop for 200 pd I think...

Everstones, which are sold at the Item Shop for 200 PD, as well as sold at the Item Market usually for less
To use the everstone, simply go to your Item Bag and give the everstone to the pokemon you wish to not evolve
