Yes. Once you reach the AP goal, you pick which egg you want. Once you pick one, you can carry on earning AP, and once you reach the goal again, you can pick one egg you want again.

Under the Home Tab, go to Event Distribution tomorrow. You can see how many Activity points you got. You can get them by interacting, auctioning, battle and other things.
