Can someone explain how can I evolve my stantler into Wyrdeer?

I think you use the azure flute, not positive though.

I thought that the Azure Flute only changed Pokémon into their Hisuian forms, and there is no Hisuian Stantler, and Wyrdeer isn’t a Hisuian form, it’s a whole new evolution, like Ursaluna and Kleavor. But, unlike Ursaluna and Kleavor, there isn’t an item that can evolve it.

It seems like no one has Wyrdeer yet, and, if that’s true, I’d take that as confirmation that the Azure Flute wouldn’t help you get it. I think that Wyrdeer’s in the same category as the Hisuian starters as an unobtainable evolution that we’ll have to get via an event distribution.
