My Lisa does ~700 damage normally since her attack stat is just over a thousand. However, her elemental mastery means that reactions can do upwards of 2k damage and can get rid of shields with ease with reactions. I rarely use her, however, and she's poorly kitted out with her talents only being 5/5/5. (Take Lisa's stats with a grain of salt, her base attack also deals damage based on Elemental mastery since it's almost always going to cause some kind of elemental reaction).
My Albedo is sort of the same despite his talents being 8/8/7. His attack and elemental mastery are both lesser than my Lisa's, so he rarely does more normal damage than her. However, his skills deal more damage based on his defense stat, and his defense is just shy of 3k. I've used him solo to take down both Stormterror and Boreas. I have had varying levels of success based on how long I give myself to fight. Albedo also has a delayed AOE if you use his skill, then burst, and then just attack normally. So there's also that to consider.
On the other hand, my Qiqi (talents 8/8/7) with 2k attack can just about fully heal my Kazuha (since Qiqi's healing is based on her attack stat) when he's down at less than 1k health, and he's got 20k health. My Kazuha with 2.4k attack and 250 elemental mastery (and talents 8/8/8) can reliably deal on average 1k damage on his own without using any skills. Using skills, however, I have seen him do upwards so 20k damage on base anemo alone, which excludes whatever other element I bring in using swirl and adds to the damage total.
My Tartaglia (talents 8/6/5), on yet another hand, has 1.6k attack and 19 elemental mastery. He does, however, has nearly 80% crit rate and 130% crit damage. For his very, very low elemental mastery stat, his riptide is insanely powerful and is wonderfully paired with Kazuha's skill for massive crowd control. I need to work on his elemental mastery, but I'm not certain I want to sacrifice his crit stats for it just yet. His first talent is actually listed as a 9, but that's because his passive buff increases the normal attack of all party members by one, so it's possible to gets normal attack past the hard-cap of 10.

I prefer a combat focused team, but I've seen people who use a combo of Kokomi and Barbara as their main. A combo like that means that you need to be weary of going against any cryo, electro or hydro enemies, and that you might take quite awhile to fight against enemies, but the constant healing and hydro-damage from that healing means you aren't likely to die. However, that's where they usually pull up their other two teammates who can deal with that weakness. (Two player co-op means each person get's two characters. Three player co-op, each person gets one character, with host getting two. Four player co-op, everyone gets a single character.)
I've also seen someone who solos with Noelle, and I'll be honest. I've been itching to try that. Her attack scales with her defense, and her shield also scales with her defense. Her shield can heal and deal damage (healing takes place when noelle attacks while shielded and scales with her defense), and it can trigger on it's own if she's in your party, not active, and your active characters health drops below 30% of their max. She's also a character you can get very, very early on since she's got a beginner exclusive banner that you're guaranteed to get her on if you pull... I think 20 times? It's laughably easy to get those 20 pulls in a single day if you take your time just exploring.
So really, it all depends on how you want to play and what you're looking for.

I personally have no issues with C6 Bennett, but I also know that there are those who have Bennett's C6 ready to activate and refuse to do so because they'd have to rebuild their team, or swap him out, if they did so.

Same with Xingqiu/Kokomi+ Lisa with Electro-Charge. It's funny to watch abyss mages get stunlocked into just standing there... electro does tend to leave an AOE on the ground when used in bodies of water, though. That AOE can stunlock you, too, if you aren't careful. They / you also take damage during this time, so it can be really dangerous.
Xinqiu + Kokomi + Kaeya + Chongyun has also done much the same in terms of freezing enemies solid for a good chunk of time.
If your enemies can't attack... well, they can't attack. That said, not all enemies can be afflicted with a stun / freeze, so... perhaps situationally useful.

Who knows how many people helped me demo team setups so I could get past world level... 6? I think it was six, at any rate. This one dude spent nearly two weeks joining my world and helping me grind artifacts, talent books, and ascension materials, and just being a general supportive guy with little things like pointing out enemy cues and the occasional "Hey, I noticed you seem like you're struggling against this kind of foe, what's up?" (usually me, because Hydro Mages sucked back then, and still suck now) and then helping me come up with a general team that worked with my, then main, Traveler. It was fun, and I like to help others because I remember how fun it was and hope someone else can enjoy a little bit of fun, too. If I can help them with something, even better!
He was AR 45 (there about) and had just wanted to show off his newly, fully kitted, Hu Tao. Noticed I was AR 20 and went "Hey, you want someone to keep you company while you go about things?". It was... odd to watch him two-hit KO most of my ascension bosses. He even dragged out fights just so I could learn their patterns for when I fight them solo.

This is a very strange update. There's so much to do, and it's all in a very vertical map. My newly acquired Venti has been helpful, albeit sort of squishy.
Same with the digging minigame you unlock by doing part of the 6-item offering. I'm a little hopeful that, going by the store owner's words, that it's a repeatable thing we can do for chests. I know it's too much to ask for, but I kinda hope it's not a 'you can only do this x number of times before the npc no longer lets you' sort of thing like others before it.
