I don’t know what to do next... I have hatched all of them and it still says I’m at 88.75% (or something) complete... is this supposed to happen?

If I remember correctly, then you
should come to their tea party to get the last Harvest Sprite,
Rainbow at the exact time

What do you mean, “go to their tea
party”? I’ve clicked everything I could and nothing
happened...

you go to their page in the ancient
cave around tea time to receive the egg. i'm not 100% sure when it
is, but that's how you get it

At the Harvest Moon series, their
"tea party" starts around 4pm.. :B
So, after you've hatched the other 7 sprites, try checking out the Sprite's House by 16:00 @Server Time. Remember to leave a space in your Party for that final 8th sprite though. :O
