Are nebula stones used up if you use them in the tall grass or do you still get to keep it?

They're single-use items. However, a nebula stone isn't used up until you find the egg in the grass and claim it. So if you activate the stone but cancel the search before you get the egg, you don't lose the stone.

Okay but for me, I've found an egg and now it says:

"Searching for: Nebula Pokémon.

The search will automatically continue once new eggs appear.

[Cancel search]"

This seems that my nebula stone isn't used up...
My question(s) is... How long does it take for the next one to appear? And/or does it just do that even though it's used up??

The next one appears once you have another Nebula Stone.
Pokémon in the Tall Grass don't appear out of nowhere, they're released from users' DayCares, so pokémon that require an item (like Lati@s, Meltan, Cosmog,...) don't get a new Egg until there's a Summon Item creating that Egg.

[If you're think your Item isn't used up, simply check your Item Bag.]
