I've been here for a couple of days but the only pokemon I'm currently attaining are just in the lab.

What are the ways to get new pokemon? And could you please go in depth with your answers please, I get confused easily.

There are several ways to get Pokémon, aside from the Lab -

The DayCare - Granted, this is just an extension of the Lab, but if you give two (compatible) pokémon and some PD to the DayCare Man, he might find an egg from time to time.

The Honeytree - If you found Honey in rumbling [or have some Combee at the Honeycombs to get you Honey], you can slather some on the tree to attract pokémon.

Tall Grass - If you have the Egg Radar and the Radar Chip (Rarity) you can search for Eggs in the Tall Grass. You need to have hatched the pokémon before you can search for it, though.
You'll need a Chip related to the rarity of the Egg, to be able to find the egg(s).

Safari Zone - For a fee, you can spend 5 minutes in the Safari Zone, throwing Poffins and Safari Balls to the pokémon as they walk/fly accross your screen.

Emera Beach - After obtaining the Fishing Rod, you can start fishing for pokémon. You can also visit Leah to upgrade your Fishing Rod and increase the amount of species you can catch.

Global Trade Station & Auction House - You can try trading/buying pokémon from other users, in case they want to get rid of them. Just have a look around the offered pokémon.

Rumble Areas - Certain areas allow you to find wild pokémon for you to adopt. They need to be unlocked first, though.
Route 102 - Berry Battle [Yearly event]
Yellow Forest - Find the Yellow Balls [Yearly event]
Alola - Visit the DayCare Man when weather is Sunny.

Ancient Cave - You can start quests here, that'll allow you to get certain pokémon [like trading in Fossils for their pokémon counterpart].
