Is there a fast way to level up post level 100 Pokémon or do they just take a while since they are much higher. I guess in general as well what's the best way to level-up Pokémon.

While I am on the topic do most Pokémon evolve under the same conditions as the games? If it is different how can I tell?

There are quick ways to level up Pokémon like interacting to attract clicks to your Pokémon and using Powerorb or Rare Candy (the quickest would be using candy but it's also the most expensive way :'D).
The higher the Pokémon's level, the harder it is to level up as it takes more EXP per level.

As for evolving mons, for normal Pokémon, yes. However, those evolving by learning moves evolve at the level which it learns that move at (for example, Steenee learns Stomp to evolve in main game, while on PokéHeroes, just level it up to level 28)
Also, Pokémon Mega evolve by using a Mega Stone if it has Mega bubble on its profile.
For Event Pokémon, I suggest visiting Wiki if you want to look for specific evolutions.
