Every new egg that's hatched becomes the pokemon that needs to be leveled to 100, even if an earlier pokemon was already more than half way there. The only way to get raylong to focus on the first pokemon again is to release or sell the new mons. It used to be that after the pokemon recognized by raylong reached level 30, they were set to be leveled.

It shows you the pokémon that'll need the least XP to get to level 100. You can just keep using the original pokémon, you don't need to release the new hatches. The pokémon it shows is a suggestion, not a requirement.
