So I've seen people having profiles under their posts in forums and interaction exchanges under their profile while posting. How do we do THAT?

Interact with my shiny retro rattata (unintentionally hatched)
Also say hello to ShadowMoon, my Shiny Umbreon that I hatched at chain #213!

I'm not sure what you mean exactly. Are you talking about signatures on forum posts and profile pages? And by "those little mons" do you mean these?:

If that is the case, signatures and profile pages can be indeed edited in the Settings. Profile Layout is where you can add and edit custom panels to your profile page and Edit Signature lets you edit your post signature (the thing that appears below each of your forum posts, my silly video game reference for example).

If you want to add those training links like the one I showed above, you should head on over to Share Widgets in the Community tab. There, you can select which pokemon you want to place on your profile or signature. Just copy the BB-Code provided and paste it into your desired place.

(Additionally, if you want to add extra bling to your profile or signature, like changing the size or color of your text, the BBCode Guide is your friend.)
