Hi I have recently started fishing and have a couple questions.
1. Do the fish appear shiny after you catch them or do you have to adopt them to find out?
2. Do adopted fish break your egg chain?

1. When you catch a Shiny Fish, it will show them shiny when you reel them in and will also be separate than the non-shiny Pokémon, as shown here.

2. When you adopt the Fish Pokémon, they don't become eggs. It's the same as adopting a Pokémon from the Rumble Areas, they simply get added to your party or first box with space in it. :)
