So I'm a little confused about breeding and original trainers. Do both pokemon need to have different original trainers? Or does one pokemon need to be my own pokemon that I hatched and the other has a different OT?

Both Pokémon can have any OT. Putting two Pokémons with different OT only increases their chance of producing an egg, similar to the official game's mechanics. Even if they're the same OT, they still can breed.
