At a time, no. But once you get one Celebi you can find another one later. :)

Yes and yes ^^ You can find another Celebi after you’ve found one, and it is possible to get a shiny Celebi.
You’ll know when you get a shiny Celebi. The celebi-artwork will change from normal Celebi to shiny Celebi ;)

And.. will super honey affect on that shiny celebi?
i means, when i'm using super honey instead of normal honey?

Super Honey does give a higher shiny chance than using normal honey for any Pokémon. So, essentially, yes.
