Two questions :)

In GTS, when players request items for trades.. I don't know how to attach items to a trade. I only have an option for pokemon. Is there a way to select items and PD?

When players refer to going on a "shiny hunt" are they attempting this at the daycare through breeding?

When a player requests Items in exchange for a Pokémon, there's a few options, you can either send the items through Delibird item delivery and then offer any Pokémon to the trade once the user accepts, attach the item to the Pokémon you're offering through the item bag then offer it and with the PD, simply gift PD to the user via their profile if the user accepts

And yes. A shiny hunt requires breeding through daycare if its Pokémon with a specific gender, example, male and female pikachus in the daycare produce eggs , if the Pokémon you're hunting is genderless, you need a ditto to breed it with, and if its a legendary that requires a summon item, you have to obtain their eggs through the quests and activities

To add on to the Shiny Hunt question; you can also use the Gem Collector and the Tall Grass [if you have the Egg Radar and the correct chip]

The DayCare is very useful, but it's not the only possibility nor is it necessary for a Shiny Hunt.
