Simply add a button over all users pages that allows you to gift an item (like a gem) like the "Gift PD" or 'Gift Nuggets" button. Reason: I am considering opening a shop but don't know how I would give the items to them.... if you could help with that (too) it would be nice.

Exactly.
Just give the said item to a pokemon that you're hunting or have loads of, and set up a trade. Easy.

You can attach an item to a pokemon using the "Give" feature and put it in the gts

If you are worried about losing pokemon, breed a bunch of "Trash" pokemon that you are fine with trading. - same for the person you are trading with

If you want an item trade, it has been suggested here, as well as several other places.

But what if a person wants to buy 20 gems, do I need to set up 20 trades?

Gem exhange and global trade already allow gem trading. Just breed some trash pokemon (magikarp, weedle, etc.) and put gems on those.

AoTora, I already linked where it was suggested before up above :3

The fact that people keep posting in here after that irritates me

This is a good idea. If you have to give 99 pokeballs away, you have to put it on 99 pokemon and the other user has to trade 99 pokes back. So that would be very hard and it would be so easier for people who have a shop or something. Full support!
