Haven't played any of the following other than X, but the games from XY onwards (XY, ORAS, S/M, US/UM, SW/SH) are known for being more hand-holdy and easier. Scarlet and Violet seem to be a little bit more challenging from what I've seen, and Legends: Arceus probably isn't good for a beginner as its more of a one-off gameplay wise.

I'd suggest X or Y, but any of the other ones I listed would also be great. If you wanted something a bit older, I think Diamond/Pearl/Platinum would also be good for beginners! Just not anything Gen 1-3 or HG/SS imo, they need a bit more experience I think. ~~ironic considering they were the first games~~.
