I've always seen most of them as fox-like, but Espeon and Umbreon are a bit cat-like to me. /shrug

Eevee is a fox. This isn't really debated much, lol.

Vaporeon is debatable, but I like to think of it as a cat for the pun catfish, lol. Plus, the sprites tend to take a more feline pose with it.

Jolteon is more canine-like in the poses that it's sprited in, but it can also go either way.

Flareon is one I've related most to a fox or dog purely because of the fluffy mane and tail.

Espeon is a cat. Mainly based on Nekomata, and Bulbapedia lists many cat traits when listing its origin. Fennec Foxes is mentioned, but with three cat species and the two cat legend references, I vote cat.

Umbreon is a black cat or a moon rabbit, at least to me. (I prefer the moon rabbit take, myself, though)

Leafeon could go either way.

Glaceon is more fox-like, an supposedly based on the Arctic Fox.

Sylveon is either a dog or a fox with a thin tail, lol.

The above is all my opinion, so yeah...
