How can you tell your pokemon shiny hatch number, I've noticed some users saying this is 7 OS what does that mean.

If you go to the Pokedex it'll tell you how many shiny:non-shiny on site. (And if it has a shadow for it'll tell that as well
You need the Pokemon first, but they just go right to the dex to see what one they hatched

EDIT:
It just means that it was the 7th shiny hatched on site. Or 1st, 2nd, etc.
