I don't like Ultra Beasts so I sold saddle every time I got one. However, after reading wiki page, I am curious how this mini quest works. Since I just want to try mini quest without actually getting the beast, I was wondering if it is similar to how maps work - when you battle the legendary and loose, you get your map back to try again.

So my question is: If I loose to the ultra beast, do I get the saddle back?

Yeah you get the saddle back if you loose. I lost to Nihilego three times today before I actually got it. You do have to redo the whole mini quest however (3 parts). If you want you can decide to go for a diffrent UB after you lost.
