If I remember correctly, Garnet can see many outcomes for many courses of action, so she couldn't have known for sure which 'timeline' would occur. ~~Garnet also tends to be a bit mysterious so-~~
Also, Pearl seems to be more dominant within Sardonyx- as far as speech goes, at least- so perhaps she (theoretically) overruled Garnet's say if she had taken a moment to see what was going to happen.

Oh hey Moon!! I agree with you on both accounts, and the Diamond thing especially could be a pretty cool twist if it was true.

On the subject of Garnet Fusions- I believe that it is possible that they all have a degree of future vision. However, it is likely not as strong as Garnet's alone. Like maybe they can only see certain things or only so far into the future or something.
