The fact that you are shiny hunting is something you remember.
And, the lab is a great source of eggs for your hunt if you are hunting anything easy. (I just glanced, a Scatterbug and a Cottonee both have been in there for two minutes at this point, if I was hunting either I'd be pleased).
The thing is, most people remember they are on a hunt. Thats what hunting is.
The pokemon developers don't stop wild pokemon from attacking you if you are shiny hunting and forget, it is for you to remember and do something about.

I agree with what Nessy said,
And usually people who would like to break their chain can use lab egg.
And further more, if lab eggs are put on stop, it will reduce the functionality for the user as they may want the lab eggs.
