I’ve hatched a Pokémon with one gold star and one silver star on its stats, what does it mean?

The star shows if the Pokémon stat have good or perfect IVs.

If your Pokémon has perfect IVs (31), a gold star is displayed.

If your Pokémon has good IVs (29 or 30), a silver star is displayed.

You can also try checking out this forum post or the wiki for more info about Individual Values (IVs).
