I got the shiny Zeraora Plushie last year. Would that net me a Shiny Zeraora egg this year or not?

No, shiny plushie and shiny Egg are unrelated.
You increase the chance of a shiny Egg when you choose a Plushie, but whether that plushie is shiny or not has no effect.
