I had a budew that I evolved into roselia and an eevee I evolved into espeon, but they don't show up in any of my boxes. They do appear in my pokedex though. Could anyone help with this?

I searched through your boxes and found a roselia and espeon. I believe these are the ones you were talking about?

Are you sure they disappeared? I see this roselia and this espeon in your second box

I'm kinda curious on what you do see, if they're not showing up. Could you show a screenhot so we'd be able to help better?
