so i sent a weak pokemon to sky pillar rumble map...not knowing it would battle rayquaza, needless to say he 1 shot ko'd me.
it says come back when your pokemon is stronger, but automatically re-sent it straight to sky pillar again? is there a way to cancall/call it back so i can send something stonger?

It’s not being resent, it’s the time it takes to get brought back to you. Wait the time and replace the weak mon with the stronger one.

No, you can not cancel any rumble missions. But as VortexGG said, with legendary rumbles, the Pokemon takes time to reach the destination, and then it takes time to come back again. And yes, your Pokemon must be pretty strong (type advantages help a lot!). For comparison, I send Pikachus on Level 500 to Galar Rumble for the legendary Galar birds, and the Pikachus do NOT oneshot the birds, but they defeat the birds pretty easily.
