I'm looking to unlock new areas like the Tall grass and Fishing. Do you unlock these areas by leveling up or is there a special trick I need to do? Also I'm having trouble finding the Harvest Sprites.

Moving to help :)

But all of the tabs that still have ???? ???? will unlock when you're trainer level increased :) There's a list here.
As for the harvest sprite thing, keep trying and they will pop up eventually, or you can check around the help section, a lot of people ask about them or you could even post in there which ones specifically you're having trouble with ^^
