So i looked at emera square and instead of a regular pinsir for the bug catching contest picture it has a possibility to be a shiny, I know you can interact with the shiny ditto and i tried to interact with the pinsir but nothing happened, is it just some easter egg and has no real purpose?

Yes, it has no purpose, just like the shiny charmander at the rumble areas.
