I sent my Pokemon out to explore the Terra Cave and when it encountered the legendary that was lurking within, the sprite showed it as a shiny. Is this the same for everyone or did I just miss my chance at getting that legendary as a shiny?

It's the same as any Shiny pokémon encounter in NPC-places [like Raylong-quest; Bug Contest; Rumble page]
It's just a random easter egg, it doesn't mean guaranteed shiny.
